Erin here today to blab a little bit in your ear \ud83d\ude42 I am currently visiting my family up in central Wisconsin. We have had a blast doing all sorts of activities that I love to do while we are\u00a0up in\u00a0the Northwoods.\u00a0We have made s&#8217;mores,\u00a0visited a cheese factory, toured an amazing man made grotto,\u00a0\u00a0enjoyed a pancake breakfast at a dairy farm, visited a fish hatchery, and gone swimming. So yeah &#8211; definitely a busy few days!<\/p>\n<p>While I could show you a bunch of pictures from this trip &#8211; I thought I would share a recipe. Wisconsin is definitely known for being a dairy state &#8211; but did you know that\u00a0it&#8217;s largest fruit crop is cranberries? I grew up making many trips out to the marsh\/cranberry bogs because my Dad&#8217;s side of the family owned their own marshes. Having fresh cranberries at Thanksgiving was something I thought everyone experienced. (I figured out that wasn&#8217;t true once I married my DH and discovered that he enjoyed canned cranberries&#8230;!) And I love craisins (dried cranberries &#8211; super yummy &#8211; I like them better then grapes). So I thought it would be fun to share a yummy cranberry recipe \ud83d\ude42\u00a0 I haven&#8217;t actually tried it myself &#8211; but it&#8217;s on my to-do list! Here it is:<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" title=\"cranberry cookies\" src=\"http:\/\/www.oceanspray.com\/CMSPages\/GetFile.aspx?guid=114ab540-0d31-4e7f-bb8d-80fefbbfb53a\" alt=\"\" width=\"380\" height=\"250\" \/><\/p>\n<p>Oatmeal Cranberry White Chocolate Chunk Cookies<\/p>\n<p>2\/3 cup butter or margarine, softened<\/p>\n<p>2\/3 cup brown sugar<\/p>\n<p>2 large eggs<\/p>\n<p>1-1\/2 cups old-fashioned oats<\/p>\n<p>1-1\/2 cups flour<\/p>\n<p>1 teaspoon baking soda<\/p>\n<p>1\/2 teaspoon salt<\/p>\n<p>1 6-ounce package sweetened, dried cranberries<\/p>\n<p>2\/3 cup white chocolate chunks or chips<\/p>\n<p>Preheat oven to 375*F. Using an electric mixer, beat butter or margarine and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in sweetened, dried cranberries and white chocolate chunks.<\/p>\n<p>Drop by rounded teaspoonfuls onto greased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack. Makes approximately 2 1\/2 dozen cookies.<\/p>\n<p>(recipe courtesy of Ocean Spray Cranberries, Inc.)<\/p>\n<p>So that&#8217;s all I have today. As I mentioned, I plan on making these cookies once we get back home. I read some reviews that said these cookies are very festive looking with the red cranberries and white chocolate chunks&#8230;maybe serve them on a blue napkin and you have a great 4th of July treat! \ud83d\ude42 Let me know if you decide to make them and what you think!
