I am loving summer vacation, I don’t have to get out of bed early and we don’t have to rush to eat & get out the door to the bus stop!\u00a0 Which means I can make something besides cereal for breakfast, hooray!\u00a0 One breakfast favorite around here is berry muffins, the kids all LOVE them (as do the parents)!\u00a0\u00a0 I usually use frozen raspberries but have tried them with fresh blueberries & they are also quite tasty!\u00a0\u00a0 Now that I’m thinking about them I totally want to try fresh blackberries cuz I bet that would rock!\u00a0\u00a0 We also make these for dinner sometimes with eggs and sausage on the side.\u00a0 \ud83d\ude42<\/p>\n

Berry Muffins<\/strong><\/p>\n

1 3\/4 cups flour<\/p>\n

2\/3 cup sugar<\/p>\n

2\u00a0 tsp baking powder<\/p>\n

1\/4 tsp salt<\/p>\n

 <\/p>\n

1 egg<\/p>\n

3\/4 cup milk<\/p>\n

1\/4 cup vegetable oil<\/p>\n

 <\/p>\n

1 cup fresh or frozen berries<\/p>\n

 <\/p>\n

Preheat oven to 400F.\u00a0 Mix\u00a0 dry ingredients in a large bowl until combined.\u00a0 In a separate bowl combine the wet\u00a0 ingredients & mix well.\u00a0 Add the wet mixture the the dry mix and stir just until combined (do not over mix).\u00a0 Gently fold in the berries.\u00a0 Scoop into greased muffin tins (or use cupcake liners) and bake for 15-20 minutes until tops look golden brown.\u00a0 Makes 12 muffins.<\/p>\n
