It&#8217;s been one of <strong>those<\/strong> weeks in my house, the ones when you are so glad it&#8217;s friday, and the weekend is upon you. It&#8217;s been so gross out weather wise (rain rain, cold cold, a little snow mixed in there) and we&#8217;ve been trapped in the house with a sick daddy. No fun! I&#8217;m looking forward to a nice break in the weather, some quality time with Connor, and maybe some away from hubby as he&#8217;s finally returning to work after a lil 3 day break there, I love the guy and all but there&#8217;s only so much a girl can take hahaha. One of my favorite things to do with Connor is bake (there&#8217;s a long list of &#8220;favorite things&#8221; but he really enjoys cooking ). Last time we baked was a bit of a disaster- he enjoyed himself but it was sheer torture on my end. We made about a million TEENY little animal shaped cookies, ugh. Not a good plan with an over eager 3 year old. He loved it though, and after a lengthy clean up of the kitchen, I finally was able to relax and appreciate just how happy it made him<br \/>\nSo, just in case the weatherman lied to me and this weekend turns out awful, why don&#8217;t you all share your favorite sweet recipe this week. If you haven&#8217;t heard, we have something called &#8220;Sweet Rewards&#8221; here at SSD. Each week there are a list of challenges etc posted both here on the blog &amp; in the forums. Simple, delicious, rewards.<br \/>\nSo I&#8217;m always trying new recipes, we have a lot of allergies and &#8220;food preference issues&#8221; {haha} issues in my house so I just went in search of something new to try &#8220;in case of weather emergencies&#8221;. Of course, I may want to bake all weekend long so be sure to share your yummy favorites!! {And hey&#8230; if you have pics those are a bonus, I&#8217;m definitely a visual person when it comes to food haha}.<\/p>\n<p>So after looking through about 9million recipes with Connor, he finally agreed to- chocolate chip cookies hahahahah.<\/p>\n<p>{photos that won the kid over and original recipe found <a href=\"http:\/\/vegweb.com\/index.php?topic=6391.0\">here<\/a> }<\/p>\n<p><span style=\"color: #ff6600;\"><span style=\"font-size: 12pt; line-height: 1.3em;\"><strong>Happy Vegan Chocolate Chip Cookies<\/strong><\/span><\/span><\/p>\n<p><span style=\"color: #ff6600;\">Ingredients (use <a href=\"http:\/\/vegweb.com\/index.php?topic=15403.0\" target=\"_blank\">vegan versions<\/a>):<\/span><\/p>\n<p>2 cups unbleached flour<br \/>\n2 tsps baking powder<br \/>\n1\/2 tsp.salt<br \/>\ncinnamon to taste (optional)<br \/>\nvegan chocolate or carob chips &#8211; put in as many as you like<br \/>\n1 cup raw sugar (turbinado #1, sucanat works too but sucks up a lot of the moisture)<br \/>\n1\/2 cup canola or vegetable oil<br \/>\n1 teaspoon vanilla<br \/>\n1\/4 cup water<\/p>\n<p><span style=\"color: #ff6600;\">Directions:<\/span><\/p>\n<p>VERY IMPORTANT-make sure all ingredients are at room temperature. It will work if they&#8217;re not at room temp but it works MUCH better if they are. Also while your oven is pre-heating put the cookie sheets you are going to use on top of the oven so they get preheated as well. Preheat oven to 350.<\/p>\n<p>In a large bowl mix flour, baking powder, salt, cinnamon (if you choose). Add chips. Make a well in the center and set aside.<\/p>\n<p>In a medium size bowl mix vegan sugar and oil. Mix it well. Add the vanilla and then add the water. Mix it well. Add the wet to the well in the dry. Mix it well but be careful not to overwork it. Add more chips if you need to. Spoon onto ungreased cookie sheets. Put them in the oven. Bake for 5 minutes and then flip and rotate the sheets.(top to bottom,and 180 degree rotation) Bake another 4 minutes and check them.<\/p>\n<p>The cookies are done when they seem a little bit softer then you want them to be. They will harden up some as they cool. I usually go in two minute increments from here untill they get to where I like them.<\/p>\n<p>Take them out when they are done and move them to wire cooling racks. If they split or come apart when you try to remove them let them sit on the pan for 2 minutes before transferring them to the racks.<\/p>\n<p>These cookies have come a long way, lots of time and tasting spent on getting them to where they are now. Vegans and non vegans LOVE them. In the words of my 6 year old son-Mom, you&#8217;re the greatest because you know how to make the best cookies. Enjoy and let me know if you have questions.
