It might be for Thanksgiving dinner, New Year&#8217;s Eve or for sweet treats to share with friends anywhere in between. In my family, we always have sweet potato casserole and pineapple casserole for Thanksgiving. We also have a cookie baking day a few days before Christmas. Can&#8217;t let those sugar levels get too low around the holidays, right? peanut butter)<\/span>\u00a0<span class=\"wprm-recipe-ingredient-notes\">(475g)<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1\/2<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">cup<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">salted butter<\/span>\u00a0<span class=\"wprm-recipe-ingredient-notes\">softened (113g)<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">2<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">Tablespoons<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">brown sugar<\/span>\u00a0<span class=\"wprm-recipe-ingredient-notes\">packed<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">1 1\/4<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">teaspoon<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">vanilla extract<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">3 1\/4<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">cups<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">powdered sugar<\/span>\u00a0<span class=\"wprm-recipe-ingredient-notes\">(405g)<\/span><\/li>\n<li class=\"wprm-recipe-ingredient\"><span class=\"wprm-recipe-ingredient-amount\">12<\/span>\u00a0<span class=\"wprm-recipe-ingredient-unit\">oz<\/span>\u00a0<span class=\"wprm-recipe-ingredient-name\">dark chocolate melting wafers<\/span>\u00a0<span class=\"wprm-recipe-ingredient-notes\">(340g)<\/span><\/li>\n<\/ul>\n<\/div>\n<h3 class=\"wprm-recipe-header\">Instructions:<\/h3>\n<div class=\"wprm-recipe-instruction-group\">\n<ol class=\"wprm-recipe-instructions\">\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Combine peanut butter and butter in the bowl of a stand mixer and beat until well-combined.<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Add brown sugar and vanilla extract. \u00a0Stir well.<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Gradually add powdered sugar until completely combined. \u00a0Scoop into Tablespoon-sized balls and roll with the palms of your hand until smooth and round.*<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Place on wax-paper lined cookie sheet and freeze for 15-20 minutes.<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>While peanut butter balls are chilling, prepare your chocolate according to package instructions. \u00a0Pour into a deep dish (I use a wide cup).<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Remove peanut butter balls from freezer, spear the top of each peanut butter ball with a toothpick and, holding the toothpick, dip each buckeye ball into the melted chocolate.<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Return to cookie sheet and remove toothpick. \u00a0Use the pads of your fingers to smooth over the toothpick mark.<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Allow chocolate to harden before eating and enjoying.<\/p>\n<\/div>\n<\/li>\n<li class=\"wprm-recipe-instruction\">\n<div class=\"wprm-recipe-instruction-text\">\n<p>Buckeye balls are best kept refrigerated.<\/p>\n<p>&nbsp;<\/p>\n<\/div>\n<\/li>\n<\/ol>\n<\/div>\n<p>And two from Vanessa:<\/p>\n<h2>Mama\u2019s Dressing<\/h2>\n<h3><strong>Ingredients:<\/strong><\/h3>\n<ul>\n<li>1 9&#215;13 pan of cornbread (I use 4 pks Martha White Cotton Pickin\u2019 Cornbread Mix)<\/li>\n<li>5 grands biscuits (cooked)<\/li>\n<li>5 boiled eggs, diced<\/li>\n<li>1 can chicken broth<\/li>\n<li>1 cup chopped celery<\/li>\n<li>1 cup diced onions<\/li>\n<li>1 can cream of chicken soup<\/li>\n<li>1 can cream of celery soup<\/li>\n<\/ul>\n<h3>Directions:<\/h3>\n<p>Saut\u00e9 onions and celery in a small skillet with a tbsp of butter and olive oil, until tender.<br \/>\nCrumble cornbread and biscuits together in a large bowl. Add eggs, sage, celery, onions, salt, pepper and soups. Use your hands to mix as you slowly add chicken broth. You may not need two whole cans, you want it to be moist, but still semi firm and stick together, not runny. It will dry out as it cooks.<br \/>\nBake at 375 until golden brown on top, about 30-45 minutes.<\/p>\n<p>&nbsp;<\/p>\n<h2>Almost Granny Ethel&#8217;s Rum Cake<\/h2>\n<h3>Ingredients:<\/h3>\n<ul>\n<li>FOR THE CAKE:<\/li>\n<li>1 box (about 18 Oz.) Yellow Cake Mix<\/li>\n<li>1 package (3.5 Oz.) INSTANT Vanilla Pudding Mix<\/li>\n<li>4 whole Eggs<\/li>\n<li>\u00bd cups Cold Water<\/li>\n<li>\u00bd cups Vegetable Oil<\/li>\n<li>\u00bd cups Rum (dark Or Light Is Fine<\/li>\n<li>1 cup Chopped Pecans<\/li>\n<li>GLAZE:<\/li>\n<li>1-\u00bd stick Butter<\/li>\n<li>\u00bc cups Water<\/li>\n<li>1 cup Sugar<\/li>\n<li>1\/4 cup plus 2 tbsp Rum<\/li>\n<\/ul>\n<h3>Directions:<\/h3>\n<p>Preheat oven to 325 F.Grease and flour a bundt cake pan. Sprinkle nuts over bottom of pan.<\/p>\n<p>If desired, sprinkle a couple of tablespoons of brown sugar over the nuts.<br \/>\nMix all cake ingredients together. Pour batter into pan over nuts. Smooth out \u2019til the top is even.<\/p>\n<p>Bake for 1 hour, or a little less if the pan is black. Do not overbake!<\/p>\n<p>Glaze: While cake has ten minutes to go, make the glaze. Melt butter in saucepan. Stir in water and sugar. Boil for 4 to 5 minutes, stirring constantly. Turn off flame and pour in rum.<\/p>\n<p>Stir to combine and reheat for 30 seconds.Remove cake from oven. Immediately drizzle 1\/3 of the glaze on the bottom (top) of the cake.<\/p>\n<p>Allow to sit for five minutes. Invert the cake onto a serving plate. Prick surface a hundred times with a fork (gently, please.) Slowly drizzle remaining rum glaze all over the top of the cake, allowing it to drip down the sides. Cool to room temperature before serving to ensure glaze has soaked in.<\/p>\n<p>This is adapted from the Pioneer Woman recipe<\/p>\n<p>&nbsp;<\/p>\n<p>And one from me:<\/p>\n<h2>Spumoni Chunk Cookies<\/h2>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-44239\" src=\"https:\/\/www.sweetshoppedesigns.com\/wp-content\/uploads\/20161221-IMG_5751.jpg\" alt=\"20161221-IMG_5751\" width=\"700\" height=\"525\" srcset=\"https:\/\/www.sweetshoppedesigns.com\/wp-content\/uploads\/20161221-IMG_5751.jpg 700w, https:\/\/www.sweetshoppedesigns.com\/wp-content\/uploads\/20161221-IMG_5751-300x225.jpg 300w, https:\/\/www.sweetshoppedesigns.com\/wp-content\/uploads\/20161221-IMG_5751-600x450.jpg 600w\" sizes=\"(max-width: 700px) 100vw, 700px\" \/><\/p>\n<h3>Ingredients:<\/h3>\n<p>1 pouch Betty Crocker sugar cookie mix<\/p>\n<p>1\/2 cup butter or margarine, softened<\/p>\n<p>1 egg<\/p>\n<p>1 cup candied cherries (like for fruitcake, either red, green or a combination)<\/p>\n<p>1 cup semisweet chocolate chunks<\/p>\n<p>1 cup salted dry-roasted pistachio nuts, coarsely chopped<\/p>\n<p>&nbsp;<\/p>\n<h3>Directions:<\/h3>\n<p>Heat oven to 375. In large bowl, stir cookie mix, butter and egg until soft dough forms. Stir in cherries, chocolate chunks and nuts. On ungreased cookie sheets, drop dough by heaping tablespoonfuls about 2 inches apart. Bake 10 to 12 minutes or until edges are golden brown.
