It&#8217;s Julie with today&#8217;s post about a quick and easy dinner recipe! I&#8217;m always looking for delicious recipes that are easy because most of the time I am making dinner in between working, running around doing errands, helping Logan with homework\u2026 ya know, typical mom stuff! As much as I love eating, the actual prep of a meal isn&#8217;t a hot button for me. So I enjoy recipes that will allow me to get out of the kitchen as soon as possible. LOL! Yummy food + easy recipe = Bliss. Here is one of my go-to recipes because I always have these ingredients on hand and our family loves it.<\/p>\n<p>I was going to be all Pioneer Woman and take pictures of every step, but honestly this is sooo easy that would have been silly. This recipe is for Kickin&#8217; Chicken. It is on the sweet side and has a bit of a kick to it. I&#8217;m not a person that loves spicy food, but this recipe is just perfect. If you are really hesitant about the spiciness because of your kids, I&#8217;d just half the red pepper flakes and jerk seasoning. Recipe at bottom of post.<\/p>\n<p>Assemble your ingredients. Just 6 ingredients, so easy! I also recommend serving Kickin&#8217; Chicken with rice. There will be lots of yummy sauce and the rice is the perfect accompaniment.<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" title=\"kickin chicken ingredients\" src=\"http:\/\/img.photobucket.com\/albums\/v243\/juliebee70\/kickinchicken1.jpg\" alt=\"\" width=\"600\" height=\"400\" \/><\/p>\n<p>Take a fork and poke a bunch of holes into the chicken breasts. I actually use the <a href=\"http:\/\/www.pamperedchef.com\/ordering\/prod_details.tpc?prodId=147&amp;catId=99&amp;parentCatId=99&amp;outletSubCat=\">Pampered Chef Hold n Slice<\/a>. No I&#8217;m not a rep of Pampered Chef, I just like this product for allowing a sauce to soak into the meat. I poke way inside, on all sides.\u00a0Mix all the ingredients in a 9&#8243;x13&#8243; casserole dish. You&#8217;ll see from my ingredients that I save my red pepper flakes packets from when I order pizza. LOL<\/p>\n<p style=\"text-align: center;\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" title=\"kickin chicken in pan\" src=\"http:\/\/img.photobucket.com\/albums\/v243\/juliebee70\/kickinchicken2.jpg\" alt=\"\" width=\"600\" height=\"400\" \/><\/p>\n<p>Place in oven and while it&#8217;s baking, make your rice and veggie. I like this with brocolli. About 35-40 minutes later, you will have this delicious dish that is so easy and flavorful!<\/p>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter\" title=\"kickin chicken on plate\" src=\"http:\/\/img.photobucket.com\/albums\/v243\/juliebee70\/kickinchicken3.jpg\" alt=\"\" width=\"600\" height=\"400\" \/><\/p>\n<p>Kickin&#8217; Chicken &#8211; serves 6<\/p>\n<p>2.5 pounds of chicken breasts, cut into large strips<\/p>\n<p>1 Cup undrained crushed pineapple<\/p>\n<p>1\/2 Cup barbecue sauce (original style)<\/p>\n<p>1\/2 Cup packed brown sugar<\/p>\n<p>1 teaspoon Caribbean Jerk Seasoning<\/p>\n<p>1\/2 teaspoon red pepper flakes<\/p>\n<p>Preheat oven for 375 degrees. Poke chicken breasts all over with fork or ice pick. Mix ingredients in a 9&#215;13&#8243; casserole dish and add chicken. Spoon sauce all over chicken. Do not marinate, place in oven right away.
