365 Days of Bliss – Potato Soup and LOTW
Hey sweeties!! Laurie here today with one of my favorite things to make. The only time I don’t really care for soup is summertime – just like lots of other folks, I’m sure! Thankfully it’s fall and time to break out the tried and true favorite fall/winter recipes. My absolute favorite is potato soup. It’s pretty awesome that it’s one of the easiest too!! Add 6 cups of water to your pot. Add 7 teaspoons of chicken bouillon granules/cubes. You’ll need to cut two 8 ounce packages of cream cheese into cubes. Add the cream cheese and cook and stir until the cheese is melted.
Add one package (30 ounces) of frozen hashbrown potatoes, thawed. Add 1 1/2 cups cubed, fully cooked ham.
Next add 1 teaspoon of garlic powder and 1 teaspoon of dill weed. You can also add 1/2 cup of chopped onion, but I choose to omit that since I’m feeding some picky eaters!! Bring to a boil and then reduce heat and simmer uncovered for about 20 minutes. It’s also a great soup to put in the crock pot and cook on low for a few hours. That’s actually the way that I usually do it because it thickens up nicely and it is so creamy!!
