It’s the everyday sort of things….

Hey hey sweet shoppers!  Laura here this morning to ramble in your ear.  Springtime is one of my favorite times of year.  All the new life that begins to sprout up, nicer weather (for the most part), the idea that summer is right around the corner…it always seems to kick my funkalicious mood to the curb and gives me a better attitude and makes me appreciate the little things in life.  Don’t get me wrong, I do know that my life is far from perfect, but it my eyes, that is exactly what it is.

 

For those of you that don’t know, I’m a Work At Home Mom.  I stay home with my two daughters and I also babysit anywhere from 2-5 kids in a day.   I spend a lot of time at home with kids so weekends are my time to spend with my family.  My husband and my two kids.  This weekend was one of those eye openers for me.  We didn’t do anything super special, but it made me realize just how great we have it.

 

I got to spend my Friday with four little girls who love to be at my house.  They don’t mind that I get cranky every now and then, and that they get yelled at because they are getting ‘too rowdy’ from time to time, but they do love spending time here and doing things that they may not do at home.  Friday was cookie day.  I’ve found that it’s a lot cheaper for me to bake cookies a couple times a week to keep as a snack in our house instead of buying them.  With as many kids (and my sweets loving husband) as I have here throughout the week, we go through a lot of snacks, and cookies are a fave.  Friday, we made “inside out” chocolate chip cookies.  My youngest ‘named’ these cookies for us.  We all love chocolate chip cookies and well, these were a reverse chocolate chip cookie in her eyes.  We made chocolate cookies with white chocolate chips and they were SO good.  Simple, yet effective…and so yummy!

Here’s the recipe we used and a shot at the batter (which is always everyone’s fave part, right?!)

Ingredients

  • 2 1/4 cups all-purpose flour
  • 2/3 cup NESTLÉ® TOLL HOUSE® Baking Cocoa
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) butter or margarine, softened
  • 3/4 cup granulated sugar
  • 2/3 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups (12-oz. pkg.) NESTLÉ® TOLL HOUSE® Premier White Morsels

Directions

PREHEAT oven to 350° F.

COMBINE flour, cocoa, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels. Drop by well-rounded teaspoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until centers are set. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

 

Saturday was a rather unique day for us.  The girls were going to their first sleepover and my husband and I had a night to ourselves!  We dropped them off and headed out to Texas Roadhouse for a little grown up dining and then we headed to the mall to just wander around.  I of course stopped at Bath and Body Works and got some things for myself, but it was so nice to just get to spend time together as Darik and Laura and not Daddy and Mommy

Sunday we spent the day with Darik’s family.  His grandma turned 88 on Thursday and we took her for lunch, then went back to my brother-in-laws house for ice cream cake.  It was just a pleasant day spent with our family….again, making me realize, through all the hustle and bustle of the week, all the stress I feel at the end of the day, this is ultimately where I want to be.  Loved, cared for, and most importantly, happy.
