There’s Some Hummus Amongus

Libby here to share with you one of my favorite go-to recipes for snacks or even a quick and easy lunch… Hummus!

I’ll admit that I’d never tried hummus before I married Jeff, and being the picky eater that I am, I was SURE I wouldn’t like it.  Well, I can now admit that I was wrong!  We bought store-bought hummus for a while, and while I liked it well enough, I didn’t LOVE it.  Then, I got Jeff a Magic Bullet for Christmas (which, btw, we love!), and he played around until he came up with what we think is the perfect hummus recipe.  We love to eat this as a dip with tortilla chips, pita bread, or veggies, but my absolute favorite way to eat it is in a wrap for lunch!  I just spread some hummus on a flour tortilla, layer a piece of provolone cheese in there, and microwave for about 30 seconds.  Perfect for days when we are on the go or I’m busy with the baby.  I could seriously eat this every single day.

Here’s Jeff’s recipe if you want to try to make your own!

Jeff’s Hummus

1 15oz can (with juices) of Garbanzo Beans (Chick Peas)
½ tsp. Sea Salt
2 Tbsp. Lemon or Lime juice
1 tsp. Minced Garlic
2 tsp. Pesto Paste
1 tsp. Sundried Tomato Paste
3 Tbsp. Tahini

Simply heat the Garbanzo beans and remove 1/4 cup of the juice (we’ve found it’s a little too runny with all the juice left in – feel free to modify this to your tastes).  Then mix the beans with the remaining juices along with the other ingredients in a blender (or Magic Bullet) until smooth.  That’s all there is to it!
