Such a Picky Eater

Hey there Sweet Shoppers!  Hope everyone is keeping cool and enjoying the summer! It’s Tronesia here with my first post as a Sugar Babe and hopefully someone can relate to my dilemma.  My only child is 4 years old and is an extremely picky eater. Our family has been trying to eat healthier food and try new things for dinner at least once a week. It never fails that every time she refuses to eat over half of her food. She will at least taste it, but I have to make a game out of it. The one thing that she does love “most” days is spaghetti (the girl changes her mind so much..lol!).  I did a little searching and found a recipe for Italian Spinach Meatballs for us to try out.

I followed the instructions exactly for the meatballs.

For the pasta sauce, I used the following:

  • Del Monte tomato sauce
  • Del Monte diced tomatoes with basil, garlic & oregano
  • Classico sun-dried Tomato Pesto
  • Seasonings:  oregano, basil, garlic powder, black pepper, sea salt, onion powder
  • 1/2 Onion (not chopped – from the recipe)

 

 

Now, I do not really use any specific measurements when added the seasonings or pesto. I taste as I go and it depends on how much spaghetti I plan on cooking. Every now and then I make a big pot of it and freeze individual servings in sandwich bags for quick dinners later in the week. Back to this spaghetti dinner- I did do one thing differently with the meatballs, which was to cook them in the oven. I tried to do them over the stove according to the recipe , but that was just not working out for me. Exactly why I am not a chef ….lol!  Some things I just am not good at, so I put the meatballs in the oven until they were nice and brown. For the noodles, I used Ronzoni whole wheat spaghetti pasta and boiled them in water with olive oil and a sprinkle of basil.

And….it was such a wonderful surprise that this was delicious! I am not a big spaghetti fan but this was so good! The Parmesan cheese and the spinach mixture in the meatballs made them good enough to eat by themselves. I will definitely be coming back to this recipe very soon.
