365 Days of Bliss: Chocolate Malt Cake!

Hello Sweet Shoppers, this is Nikki with today’s post. I love to bake. I love going into my kitchen and taking ordinary ingredients and turning them into something warm and decadent and home made. I think I’m addicted to baking just as much as I’m addicted to digi-scrapping and I especially love to share my baking with others. So when my sister called and said she was coming for a visit I jumped on Pinterest and started looking for something super-delicious to bake for dessert after our family supper that night. I had pinned this recipe from BakerGirl’s Blog and decided now was the perfect time to try it out. After a quick trip to the store to get some Malt Powder and a box of Whoppers I set to work in my kitchen and after it was all over I had made one of the most delicious cakes I have ever tasted.

Seriously, this will be my go-to cake from now on I think. Perfectly chocolate and the malt powder adds a fabulous flavor to both the cake and the frosting. Let me just tell you about the frosting. De-Licious. Seriously. Sometimes at night I still dream about it. 🙂

Those aren’t the best photos..because the light was bad in my kitchen..not to mention the fact that I had 3 people standing around it with plate and fork in hand ready to dig in. I can say it was a HUGE hit and after my sister left the next day there wasn’t a sliver of it left.

Here’s the recipe:

Chocolate Malt Cake

Cake
2 1/4 cups all-purpose flour
1 1/4 cup sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 cup malted milk powder
1 cup vegetable oil
3 large eggs
1 cup sour cream
1 teaspoon vanilla extract

Chocolate Malt Frosting
1 cup butter, softened
1/2 cup unsweetened cocoa powder (I used a little less because I didn’t want it super-chocolately)
3/4 cup heavy whipping cream
1/2 cup malted milk powder
5 cups confectioners’ sugar
Garnish: malted milk balls

Preheat oven to 350°F. Grease and flour 3 (9-inch) cake pans.

In the bowl of an electric mixture, combine flour, sugar, cocoa, baking soda, baking powder, and salt.

In a small bowl, combine milk and malted milk powder, stirring to dissolve. Add milk mixture, oil, and eggs to flour mixture, beating at medium speed until smooth. Add sour cream and vanilla, beating just until combined. Pour batter evenly into prepared pans, and bake for 20 minutes, or until a toothpick inserted in center comes out clean. Let cool in pans for 10 minutes. Remove cakes from pans and let cool completely on wire racks.

To make the frosting, in a large bowl, beat butter and cocoa powder at medium speed with an electric mixer until creamy.

In a small bowl, combine cream and malted milk powder, stirring to dissolve. Add cream mixture to butter mixture, beating at low speed to combine. Gradually beat in confectioners’ sugar until smooth.

Spread frosting between layers and on top and sides of cake. Garnish with malted milk balls, if desired.
