365 days of Bliss: Easy Dinner Recipes are bliss!

Hello hungry Sweet Shoppers! It’s Julie with today’s post about a quick and easy dinner recipe! I’m always looking for delicious recipes that are easy because most of the time I am making dinner in between working, running around doing errands, helping Logan with homework… ya know, typical mom stuff! As much as I love eating, the actual prep of a meal isn’t a hot button for me. So I enjoy recipes that will allow me to get out of the kitchen as soon as possible. LOL! Yummy food + easy recipe = Bliss. Here is one of my go-to recipes because I always have these ingredients on hand and our family loves it.

I was going to be all Pioneer Woman and take pictures of every step, but honestly this is sooo easy that would have been silly. This recipe is for Kickin’ Chicken. It is on the sweet side and has a bit of a kick to it. I’m not a person that loves spicy food, but this recipe is just perfect. If you are really hesitant about the spiciness because of your kids, I’d just half the red pepper flakes and jerk seasoning. Recipe at bottom of post.

Assemble your ingredients. Just 6 ingredients, so easy! I also recommend serving Kickin’ Chicken with rice. There will be lots of yummy sauce and the rice is the perfect accompaniment.

Take a fork and poke a bunch of holes into the chicken breasts. I actually use the Pampered Chef Hold n Slice. No I’m not a rep of Pampered Chef, I just like this product for allowing a sauce to soak into the meat. I poke way inside, on all sides. Mix all the ingredients in a 9″x13″ casserole dish. You’ll see from my ingredients that I save my red pepper flakes packets from when I order pizza. LOL

Place in oven and while it’s baking, make your rice and veggie. I like this with brocolli. About 35-40 minutes later, you will have this delicious dish that is so easy and flavorful!

Kickin’ Chicken – serves 6

2.5 pounds of chicken breasts, cut into large strips

1 Cup undrained crushed pineapple

1/2 Cup barbecue sauce (original style)

1/2 Cup packed brown sugar

1 teaspoon Caribbean Jerk Seasoning

1/2 teaspoon red pepper flakes

Preheat oven for 375 degrees. Poke chicken breasts all over with fork or ice pick. Mix ingredients in a 9×13″ casserole dish and add chicken. Spoon sauce all over chicken. Do not marinate, place in oven right away. Do not cover. Cook in oven for 35-40 minutes. Serve with rice. Enjoy!
