Another Featured Designer Friday is here Sweet Shoppers, and this week we’re bringing you part two of Amber Shaw’s fun 4 in ’14 spotlight which is going to give you some insight into her favorite layouts, gluten free recipes and MORE! I have been loving the chance to get to know our designers a little better words and pictures, and I hope you have been enjoying it too! Me and my flip flops the other day: I do NOT like to drive, you will find me in the passenger seat whenever possible, even if it requires me throwing a fit, feet propped up and enjoying the ride — in flip flops if I can help it!

Last October, we found out our daughter had Celiac Disease.  Though I felt we always ate very healthy, it drastically changed the way we eat.  We eat even healthier now making nearly everything from scratch, and these are some of our favorite Gluten Free dishes.

Soups:  We LOVE soups.  We will eat them as soon as the weather cools down.  I either make them in the crockpot or we cook them over an open fire.

Chicken Enchiladas:  by switching from flour to corn tortillas, we love to make the “Suiza” version of enchiladas.  A creamy chicken filling, cream sauce, cheese, and salsa verde.  It’s in our weekly rotation.

Skillet Cookies:  We have these lovely little mini cast iron skillets and it’s not uncommon for these guys to beg me to make skillet cookies.  I was so glad when I found a gluten free recipe that was just as delicious as a “regular” cookie!

Chicken Bruschetta:  BCD aka Before Celiac Disease… we use to love to eat fresh bruschetta with a piping hot loaf of french bread (and a bottle of wine for me!)  Instead we now will grill chicken breasts and drown them in a bruschetta mixture with fresh mozzarella and have a salad with it.

Some people in digiland have probably heard me fuss and groan about how much I miss Florida.  We lived there for 11 years and now we are in Indiana.  There is not a day that goes by that I am not thinking of how or when I can get back there or one of my favorite places that I wish I could just head out to for the day.  These are just a few of my favorites:

Clearwater Beach.  It’s Clearwater, and it’s the beach.  Enough said.  I love just about everything about this beach.  You aren’t far from wonderful eateries and shops, or tiki bars but the beach is large enough that you can wander off and feel alone.  I loved going to Clearwater Beach after dark the best.

Tarpon Springs:  I LOOOOVE Tarpon Springs.  It is so nostalgic and lovely and like stepping into a little village in Greece.  I love to go into all of the shops and stop at Hellas.  I love their Spanakopita and Saganaki.  Seriously, I want to be there now!

The Columbia:  This restaurant is Florida’s oldest restaurant in Ybor City.  They create authentic Cuban food (which I equally love as much as Greek food) It use to be the place where local cigar makers would go to in the early days.  It is adorned with colorful hand-painted tiles and you can purchases hand-painted dishes.  It’s just beautiful and the atrium is my favorite place for lunch.  They also make incredible Sangria.

Caladesi Island:  Also know as Honeymoon Island.  It is a very remote and secluded beach.  No shops, just miles and miles of white sand and beautiful sunsets.  On our first wedding anniversary, my husband drove me to Honeymoon Island and we watched the sunset.

I do not scrap near as often as I want to.  But when I do it’s always my family.

(top left) These are all 4 of my children together, we went to the movies over Christmas. These 4 people are my sole purpose!

(top right) This is our living room, the hub of the house.  This is where we have family movie time, or just all lay around and read.  It’s where we visit with guests and in the winter where the Christmas tree goes.  It’s my favorite room in the house.

(bottom left) This is my 9 year old when he was 8 months old.  I love his cheeks in this photo and it’s always been one of my favorite pages.

(bottom right) This is me and hubby, my partner in crime and the only one who fully understands my random movie and song quotes.  We were at the lake a few years back and we wanted to step away from the big group of family so we went for a walk and he took this pic of us.  He had to crouch down, you can’t see in the picture, but he’s an entire 18″ taller than me.  I’m 5’2″, I will let you do the math 🙂
